Welcome to KWA - Koolang Wagyu Australia.

KWA is a boutique operation devoted to the sustainable production and development of Wagyu cattle. The owners, Michael and Frederique Katz began by breeding first cross Wagyu calves from their angus heifers in 2004. They had lived in Japan for 3 years in the early 1990s and have always appreciated the Japanese culture and attention to detail which reminds them of their Swiss roots.

In 2006 a program of breeding full blood Wagyu bulls for the local market was commenced.

In 2009 they expanded the operation with the objective  of producing  sustainable grass fed full blood Wagyu for the local Sydney market. This somewhat rare concept marries the superb eating quality of the Wagyu breed with the climatic and geographic advantages of their location in the Southern Tablelands in NSW. Just 20 kilometres north of Gunning and the Hume highway they are able to take advantage of great basalt soils which provide fertile pasture combined with lighter country just off the basalt which has superb native grasses. 

A concentrated calving program in July and August allows cows and calves to take advantage of the spring alpine flush of grass so typical of the high country. The cattle are rotationally grazed to provide a sustainable operation which has seen massive growth in ground cover.
